The greenhouse of Jonathan Karpathios was bound to close down at the end of 2011. But with a lot of hard work and willpower, the green house is still up and running and even expanding. Over 200 different vegetables, herbs and flowers are grown here. Ancient crops are being brought back to life. Jonathan can be found here on a daily basis to harvest these beautiful fresh, pesticide-free crops. The pantry of his restaurant is stocked daily with the finest quality of homegrown produce. By growing these vegetables from seed to end product, Jonathan and his staff learn a lot about the different stages in the growing process: how the crop develops, how long it takes to develop and the taste range linked to each stage of growth. Learning more about these processes stimulates creativity in the kitchen. In nature everything is perfect, even when it doesn’t appear that way.
